Nonya Pork with Soy Sauce and Lime

Nonya Pork with Soy Sauce and Lime is an easy and pleasantly piquant dish which doesn't use coconut milk, so it's good for those watching their saturated fat intake. Another recipe courtesy of the Tang family in Singapore.

  1. Heat the oil in a wok or deep sauté skilled, add onion and garlic, ginger and lemon grass. Stir-fry over medium heat for 3-4 minutes. Increase the heat slightly, add the pork and stir-fry over high heat until it changes color all over, about 1 minute.
  2. Sprinkle the pork with lime juice, soy sauce, sugar and 1 tablespoon water. Lower the heat to medium and stir-fry until the pork is tender, adding another tablespoon or two of water if needed to prevent the meat from sticking and burning, about 5 minutes.
  3. When the pork is cooked, add chilies and stir well. Transfer to a serving dish and serve with steamed rice.
