Sardines and Chopped Eggs

Appetizers that can be prepared before guests arrive are my favorite choice as I like to spend time socializing. Here is a simple recipe that hails from the southern Italian region of Sicily.

Instructions

  1. Combine mashed eggs, parsley, scallions, olive oil, lemon juice, and salt and pepper to taste; mix together.
  2. Spoon egg mixture on toast pieces and arrange one sardine on each serving. Mix a few drops of Worcestershire sauce with oil from sardines or with regular olive oil and spoon over the sardines.
  3. Serve with wedges of lemon.
