Sardines and Chopped Eggs
Appetizers that can be prepared before guests arrive are my favorite choice as I like to spend time socializing. Here is a simple recipe that hails from the southern Italian region of Sicily.
Ingredients
- 4 hard-cooked eggs, mashed with a fork
- 6 fresh parsley sprigs, leaves only, chopped fine
- 2 whole fresh green scallions, minced fine
- 2 heaping tbsp olive oil
- Juice of 1 lemon
- Salt and pepper
- 4 pieces of rustic Italian bread, toasted
- 4 good size imported sardines in olive oil
- Worcestershire sauce
- Lemon wedges
Instructions
- Combine mashed eggs, parsley, scallions, olive oil, lemon juice, and salt and pepper to taste; mix together.
- Spoon egg mixture on toast pieces and arrange one sardine on each serving. Mix a few drops of Worcestershire sauce with oil from sardines or with regular olive oil and spoon over the sardines.
- Serve with wedges of lemon.
