Warm Celery Root Salad
Although Americans have not embraced some of the root vegetables from Asia and Europe. You can find celery roots in most supermarket and they hold up well in a refrigerator if not used at once. Here is a simple recipe that I know you will enjoy.
Ingredients
- 1 lb celery root
- ¼ butter, melted
- 1 garlic clove, mashed
- ½ tsp powdered mustard
- Juice of 1 lemon
- Salt and pepper
Instructions
- Peel or scrap the root and cook in boiling salted water for about 20 minutes. Don not overcook. Drain well.
- Cut into ¼-inch strips or grate, whatever you prefer.
- Put the butter in a bowl and stir in the garlic. Add lemon juice and mustard and mix well. Discard bits of garlic.
- spoon mixture over warm celery root.
